Can be discriminating yet objective, opinionated yet fair, even brutally honest where appropriate (but not just cranky), and can be confident of your own opinions 4. Know the difference between extraordinary, gourmet quality food (an A grade in our system) and food that is simply very good (a B grade) 5.
